Pancakes Please!

You might have noticed that I usually start my day with a green juice made from greens, lemons, cucumbers and apples. Other days I'm in the mood for a morning fruit juice made up of whats in season. If your new or curious about incorporating raw foods into your lifestyle than breakfast is a easy way to do so. Enjoy a fruit salad, a couple pieces of fruit, a smoothie or juice, whichever it may be your going to feel a lot better for choosing it over old SAD breakfast comfort foods (ie/muffins, pancakes, french toast, biscuits, bagels). If you are feeling like it may be to difficult, especially in the beginning, to let go of those breakfast comfort foods, then there is a solution. Try making them out of living foods. Yesterday my lil guy asked if we could make pancakes for breakfast. I thought this was the perfect chance to make a Raw version of pancakes, luckily I had Ani Phyo's recipe for Coconut Breakfast Cakes.




I cut this recipe in half because it makes a lot of pancakes. With half the recipe we were able to make 4 pancakes and I was able to eat about 1.5 before feeling to full to go on. :)



Coconut Breakfast Cakes

1.5 cups of ground flax seeds
1 Tablespoon coconut oil
1/4 cup agave
1/4 teaspoon sea salt
1/4 cup water

Put the flax meal, coconut oil, agave, sea salt and water in a bowl and mix well. Form balls and flatten into a "pancake" shape. Serve with your favorite fruit or chopped nuts. Drizzle with syrup. They keep in the fridge for 4-5 days. Optional: Mix blueberries or walnuts into your breakfast cake mixture.

Enjoy your breakfast! There are so many healthy options to choose from that are delicious.
