Flowers & Granola

I've been busy the past couple days enjoying my flowers and trying out some different bluberry recipes.

Here are a few pictures of what's been happening in my kitchen...

I made three food options from the same recipe, which makes this recipe super versatile. The granola is delicious with milk, the bars are great for on the go, and the donut bits are just a healthy treat!

Here's the recipe:

(The Dry Mix)
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup almond
1 cup oats
1 cup buckwheat groats
2 tbsp pumpkin pie spice (mixture of cinnamon, allspice, cloves, nutmeg)

Blend everything in your food processor separately, except for the spice. This makes it easier to ensure that the seeds, oats, groats or nuts have broken down into small pieces. Add everything into a bowl. Add the pumpkin pie spice and mix.

*Note: If you don't have all these ingredients, use whatever you have in your cupboards. That's what I did! I'm sure these would be great with pecans or walnuts, or maybe some coconut!

(The Wet Mix)
1.5 cups dates
Orange Juice from 2 large oranges
2 tbsp vanilla
2 cups blueberries
Blend the dates, orange juice, and vanilla in the food processor till smooth. Add to the dry ingredients. Then blend the blueberries in the food processor and add to the dry. Mix everything!

Either form into little balls and place into the fridge. I let them harden for a 2 hours in the fridge and they were ready to eat! My lil one really enjoyed them this way :)The granola and the bars both need to be dehydrated for about a day or so. I knew my granola was done when it was crunchy and had very little moisture. I took the bars out at the same time and am storing them in the fridge since they do have a bit of moisture left in them. This makes them chewy and delicious :) As for the granola, it's my favorite way to eat this recipe. It's so good with milk and berries!

This looks really yummy--plus I think I can get my 19 yr. old roommate, my husband, and my son to eat it! Thanks also for the variations. I like the idea of one mix producing different types of foods.

Thanks Elle :) That's what I love about this recipe too! My lil guy loved the donut bits, I loved the granola, and my guy loved taking the bars to work for lunch! It ended up being convenient for everyone and I didn't have to make three different recipes :D

Awww thats such a cute photo of Mathew and ha-ha I thought those flowers were some kinda food. My face was like this :S looking at the dashboard and then was :D ohhh flowers, pretty.To bad they weren't food thats a very vibrant color for something.Oh yum yum blueberries, i think I'm going to make some like cheesecake with them soon since we have cream cheese :D.

Dini- Arn't those flowers bright green! Nate and Matt bought them for me the other day :)

You have to try this granola, I'll bring a little bag of it over for your breakfast tomorrow morning :)
I love the granola with milk. Nate says the bars texture reminds him of Nature Valley bars, not in taste though :)

I love homemade granola and granola bars! Never made granola bites before..but I know I love the quaker version so no doubt the homemade version would be even better. :) Thanks for the recipe- they all sounds delicious! But when you say the bars/granola needs to be dehydrated..how do you do that? Do you need a dehydrater or can you just let them sit?

ooh thanks for the recipe!! It looks great!! I don't have buckwheat groats, can I use sprouted quinoa instead?

Hi Mary - I dehydrated my bars and granola in a dehyrator for the day. I would totally reccomend doing it this way. I have seen variations where people bake granola in the oven below 150F. I wanted to keep mine raw though, hence using the dehydrator :) Hope that helped! :)

Hi Keephangingon - Yes, I think you could use sprouted quinoa. I've actually seen it used in a few granola recipes before :) I've never tried it in granola, but I'm sure it would work out great!
